First preheat the oven to 350º F. Take a medium sized bowl and combine margarine and sugar in it. Beat this mixture to attain light and fluffy texture. Ingredients
* Margarine – 2/3 cup
* Brown sugar – 2/3 cup
* Sugar substitute 2/3 cup
* Vanilla extract – 2 teaspoons
* Large eggs – 2
* All-purpose flour – 1½ cups
* Baking soda – 1 teaspoon
* Salt – ¼ teaspoon
* Semi-sweet chocolate chips – 1 cup
Procedure
In a small bowl add butter, sugar substitute, vanilla extract and brown sugar. Combine these ingredients to attain a creamy texture. Then add eggs into this mixture, one at a time and mix the ingredients properly. Combine baking soda and flour to this mixture and stir in the chocolate chips. * Granulated sugar replacement – 5 teaspoons
* Ground cinnamon – 1 teaspoon
* All-purpose flour – 1½ cup

This is one of the best diabetic cookie recipes that provides only 41 calories per cookie. First beat eggs and water in a medium sized bowl to attain light and fluffy texture. Then add in sugar replacement and cinnamon to this mixture. Combine baking soda, salt and all purpose flour in the container of a sifter and then add half of this mixture into the egg mixture. Mix the ingredients and prepare cookie dough. Then combine the remaining flour mixture with this dough. * Baking powder – ½ teaspoon
Procedure
Grease a cookie sheet with cooking spray and preheat the oven to 350º F. To prepare the cookie dough, combine butter, sugar substitute, vanilla extract and almond extract in a bowl and beat the mixture. Then add egg yolk and blend the mixture properly. Add in all-purpose flour and baking powder to the egg mixture and mix the ingredients properly. With help of cookie press, press the cookie dough on the cookie sheet. Place the cookies at least one inch apart from each other and bake them in a preheated oven for about 10 minutes.
